You’ve heard of cow’s milk cheese and goat’s milk cheese, but have you ever tried water buffalo cheese? Fading D Farm in Salisbury is working to change that. The small, family-owned farm raises water buffalo and produces delicious cheeses using water buffalo milk.
Some of Fading D’s products include Bel Bufala, a mild, creamy cheese great for eating by itself; Sapore, a sharper cheese perfect for pasta dishes; and Mozzarella di Bufala, a mild yet distinct traditional cultured cheese. The farm also sells water buffalo meat and offers all-day cheesemaking classes.
